Whether you’re looking for an exciting, out-of-the-ordinary Super Bowl Sunday hors d’oeuvre or a fun, filling snack for a get-together any time of year, try these delicious stuffed peppers. I love this recipe because it’s fun to make, serve and eat! It only requires 3 ingredients if you have some leftover meat. I used some leftover beef barbacoa for this recipe.

Mini Stuffed Peppers Make a Great Party Food

I like to make this stuffed pepper recipe when I’m having a party or a small gathering. These bites work great for guests because you can throw them together quickly, they impress a crowd with their colorful presentation and they offer a finger food people can dip with. You can serve these up with other snacks and hors d’oeuvres so your guests can get small bites of everything. It takes less than a half hour to make this recipe (when you make the meat stuffing in advance) so you can focus on finishing the rest of your tasks for the party.

A Healthy Snack for Get-Togethers

I know it’s easy to serve up a bunch of junk food when you’re having people over because it takes too much effort to make healthy food. Not with these sweet pepper bites, my friend. You get the nutrients of the sweet bell peppers, which give you a heaping of vitamin C and some vitamin A, protein and fiber with a healthy amount of some calories.

Ingredients

Units Scale
  • 1 pound mini sweet peppers
  • 1 cup beef barbacoa (Find the recipe here. You can also use cooked sausage for the stuffing.)
  • 1/2 cup Mexican cheese blend
  • Guacamole and/or salsa for serving

Instructions

  1. Preheat oven to 350°F.
  2. Place mini sweet peppers on a cutting board. Slice off one side of each pepper horizontally to make a pepper boat. Discard the seeds.
  3. Line a baking sheet with parchment paper or foil. Stuff each pepper with beef barbacoa and place them in the baking sheet in a single layer. Sprinkle with cheese on top.
  4. Bake for 10-12 minutes until cheese is melt.
  5. To serve, grab one mini stuffed pepper and dip it into guacamole or salsa, or both (because why not?) Enjoy!
