  • 1 yellow onion, diced
  • 4 cloves garlic, minced
  • 1/2 teaspoon sea salt
  • 6 ounces (170g) quinoa
  • 2.8 pounds (1275g) pumpkin purée
  • 1/2 teaspoon ground cinnamon
  • pinch of red pepper flakes
  • freshly ground black pepper, to taste
  • 32 fluid ounces (950ml) vegetable stock
  • 4 fluid ounces (120ml) canned full-fat coconut milk
  • 4 tablespoons pumpkin seeds, toasted

Instructions

  1. In a large Dutch oven or heavy pot, heat olive oil over medium heat. Add onion, garlic, and salt. Cook for 8-10 minutes until the onion is translucent.


  2. While the onion cooks, boil quinoa according to package instructions. Add pumpkin purée, cinnamon, red pepper flakes, and black pepper to the pot. Stir well.


  3. Pour in vegetable stock, bring to a boil, then reduce to a simmer. Cook for 15 minutes.


  4. Stir in coconut milk. Remove from heat and let cool slightly.


  5. Blend soup using an immersion blender, then return to the pot and stir in cooked quinoa and reheat gently.
