I’m a big fan of savory breakfasts. The breakfast moment in the morning is fundamental because it gives your body and mind the right energy to face the day in the best way, interrupting the long night of fasting.
A healthy breakfast must combine all the nutrients that your body needs. It should ideally contain all macronutrients (proteins, good fats, fiber, and carbohydrates) in the right proportions, and a savory meal is usually more balanced than a sweet one. Hence, this prawn and leek frittata.
Three Reasons to Love This Prawn and Leek Frittata
- Leeks are in season. Seasonal food is fresher, tastier, and more nutritious than food consumed out of season. Cooking the freshest leeks and enjoying them in the first meal of the day is truly a fresh start.
- It’s high in protein. Then there are semisweet, mildly salty, and savory prawns, bonded with soft cooked leeks and an egg and cream cheese mixture. It has adequate protein, fiber, and healthy fat and is low in carbs.
- It’s quick and easy. It takes 20 minutes from start to finish.

Description
This 20-minute prawn and leek frittata is an ideal savory breakfast to fuel your day with high protein, fiber, and pure satisfaction.
Ingredients
- 5 large eggs
- 4.2 oz. (120g) low-fat cream cheese, divided
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 3 large leeks, sliced, white and light green parts only
- 5.3 oz. (150g) raw peeled large shrimp
- 1/2 teaspoon Italian herb mix
- Fresh parsley for garnishing
Instructions
- Beat the eggs together and whisk in half the cream cheese. Season to taste with salt and pepper. Set the egg mixture aside.
- Heat olive oil in a medium skillet. Add the leeks and cook for 5 minutes. Stir in the shrimp and herb mix, and cook for 1 minute.
- Pour the egg mixture over the shrimp and leeks, dot with the remaining cream cheese, and cook on medium heat for 5-8 minutes. Meanwhile, heat the broiler on high.Â
- Finish the frittata under the broiler for 2 minutes until just set on top with a slight wobble.
- Garnish with chopped fresh parsley and serve with a hot sauce if desired.
Notes
Don’t throw out the dark green part of your leeks. Put them in soups or use them for homemade broths.
