As we all know that dessert by definition is a sweet course that concludes a meal. Meals without dessert? You are probably going to be just fine. Let’s be honest here. Dessert is like one more luxury handbag for a gal or an extra pair of cufflinks for a pal. Is it something you absolutely need and can’t live without? Probably not.

As long as it is not going to affect your financial status significantly, plus it actually pleases you in some way by obtaining some nice stuff, why not?

As long as dessert is not going to do you any bad (which I doubt unless you over consume – although desserts are sweet a small amount of sugar is recommended in a daily diet), why not making a good amount of dessert once every week? Not to mention, it’s not expensive at all yet SO nice to have!! 😀

They are nutty. They are sweet. With two layers of baked goodies, these honey cashew squares are not only delicious but so darn healthy.


Ingredients

For square base:

  • 2/3 cup cake flour
  • 2 oz butter, room temperature
  • 2 tablespoons brown sugar
  • 1 egg, beaten

For honey cashew topping:

  • 1 cup cashew, chopped, toasted
  • 3 tablespoons brown sugar
  • 2 tablespoons honey
  • 2 oz butter
  • 1/3 cup whipping cream

Instructions

  1. Preheat oven to 350°F. Place flour, butter, brown sugar in a large bowl. Use your hands to break the butter into the flour until they’re evenly distributed and resemble the size of small peas.
  2. Add egg into the flour mixture and stir until even.
  3. Grease an 8×8 inch baking dish and place the base mixture in. Flatten the base with the back of a spoon. Bake for 25 minutes until the base turns golden.
  4. While baking the base, prepare for the honey cashew topping. First, chop the cashew. Then place brown sugar, honey, butter and whipping cream in a saucepan.
  5. When the baking is done, take out the base from your oven and let it cool down. Bring everything in the saucepan to a boil and then simmer for 3-4 minutes, uncovered, or until the color of the honey mixture turns caramel. Turn off the heat and quickly stir in the chopped cashew.
  6. Slowly place the honey cashew topping on top of the base in the same baking dish. Use the back of a big spoon to flat it out.
  7. Bake for another 8 minutes over 350°F.
  8. Allow a few hours cooling time before cutting into 16 squares.
