Description

Shrimp tacos made with a homemade blackened seasoning mix, topped with refreshing mango avocado salsa and feta cheese. Yum!

Ingredients

Scale

For the blackened seasoning mix:

  • 1 teaspoon chili powder or cayenne pepper
  • 1/2 teaspoon Kosher salt
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon garlic powder

For the shrimp tacos:

  • 1 pound large shrimp, peeled and deveined (about 30 shrimp)
  • 2 tablespoons extra-virgin olive oil
  • 6 corn tortillas or flour tortillas
  • 6 tablespoons crushed feta cheese

For the Mango Avocado Salsa, find the recipe here.

Instructions

  1. Combine all ingredients for the blackened seasoning mix in a small bowl.
  2. Place prepared shrimp in a medium bowl and add the seasoning mix to it. Mix until the shrimp is well coated.
  3. In a large skillet, heat oil over medium-high heat. Add seasoned shrimp and cook until no longer pink, stirring occasionally for about 2-3 minutes. Set aside.
  4. Make the Mango Avocado Salsa. (I recommend that you make it ahead of time, so making these tacos is even quicker.)
  5. To assemble the tacos, warm tortillas in a microwave for 30 seconds. Place 5 shrimp in the middle of a tortilla, add 2-3 spoonfuls of Mango Avocado Salsa, and top with 1 tablespoon feta cheese. Assemble the rest of the tacos and serve with lime wedges if desired. Enjoy!
