Description

Coated with sun-dried tomato and caper infused butter, this delicious roasted pork tenderloin recipe only requires 8 ingredients and 25 minutes.


Ingredients

  • 2 tablespoons sun-dried tomatoes, chopped
  • 1 tablespoon capers, chopped
  • 1/4 cup butter, softened
  • 1 pound pork tenderloin
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat oven to 375°F.
  2. Chop sun-dried tomatoes and capers. Stir in softened butter and set aside.
  3. Heat a cast iron skillet over medium-high heat for about 2 minutes.
  4. Rinse pork tenderloin and pat dry with a paper towel. Cut pork into 4 equal pieces. Coat pork with olive oil; season well with salt and pepper.
  5. Place pork in the skillet. Sear each side for 2-3 minutes or until browned.
  6. Turn off heat. Spread half of the butter mixture onto the pork; transfer the skillet into the oven and bake for 10-12 minutes or until pork is 145°F.
  7. Once done, top pork with remaining half of the butter mixture. Sprinkle with parsley. Slice it up and serve. Enjoy!
