Description

This fennel apple salad is a gluten-free and vegan-friendly healthy side dish that only takes 10 mins to put together. So crunchy and yummy!


Ingredients

  • 1 small Granny Smith apple or another crisp variety, cored and thinly sliced
  • 1 small fennel bulb, thinly sliced
  • 2 celery stalks, thinly sliced
  • Salt and pepper, to taste
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons apple cider vinegar or white wine vinegar
  • 1 tablespoon honey
  • Fresh thyme leaves or fennel fronds (optional)
  • 1 ounce walnuts, toasted and roughly chopped

Instructions

  1. Combine thinly sliced apple, fennel, and celery in a large bowl. Season with salt and pepper to taste, then dress with olive oil, vinegar, and honey. Toss well and adjust the flavor by adding more vinegar and/or honey if desired.
  2. Garnish with fresh thyme or fennel fronds (if using) and top the salad with toasted walnuts. Enjoy!
