1 small Granny Smith apple or another crisp variety, cored and thinly sliced
1 small fennel bulb, thinly sliced
2 celery stalks, thinly sliced
Salt and pepper, to taste
2 tablespoons extra virgin olive oil
2 tablespoons apple cider vinegar or white wine vinegar
1 tablespoon honey Fresh thyme leaves or fennel fronds (optional)
1ounce walnuts, toasted and roughly chopped
Combine thinly sliced apple, fennel, and celery in a large bowl. Season with salt and pepper to taste, then dress with olive oil, vinegar, and honey. Toss well and adjust the flavor by adding more vinegar and/or honey if desired.
Garnish with fresh thyme or fennel fronds (if using) and top the salad with toasted walnuts. Enjoy!
