Ingredients

  • 2 large lemons, juiced
  • 1/3 cup extra-virgin olive oil
  • 2 tablespoons Dijon mustard
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. In a small bowl, whisk fresh lemon juice, olive oil, Dijon mustard, salt, and pepper together until well blended. Transfer to an airtight container. Drizzle over salads.

Notes

  • A good and healthy ratio between the lemon juice and the oil is 1:1. So your lemon vinaigrette dressing might yield more or less depending on the size of your lemons.
  • The lemon vinaigrette dressing can be stored in the fridge for up to a week.
  • Shake well before using.
