A surprising new take on a Peruvian classic, this brilliant aji verde green sauce will become your new secret sauce in the kitchen.

Ingredients

Scale
  • 1 cup cilantro leaves and tender stems
  • 2 to 3 jalapeños, seeded and diced
  • 1/4 heaping cup of crumbled feta cheese
  • 1 garlic clove
  • 1 1/2 tablespoons lime juice, more to taste
  • 2 teaspoons chopped fresh oregano
  • 3/4 teaspoon sea salt, more to taste
  • 1/2 teaspoon Dijon mustard
  • 1/2 tablespoon Sriracha
  • 1/2 teaspoon honey
  • 1/2 teaspoon ground cumin
  • 1/2 cup extra-virgin olive oil

Instructions

Place all ingredients except the olive oil in a blender. Blend until smooth. With the motor running, slowly drizzle in oil until the mixture is smooth. Taste and adjust the seasonings with more salt or lime juice.
