Fusion Cooker Beef Barbacoa
Extremely tender barbacoa recipe made with a savory chipotle sauce. This Fusion Cooker beef recipe only takes 5 mins of hands-on time and let the Fusion Cooker do the rest!

The staple barbacoa in my house is usually made in a slow cooker. I make it right before going to bed. So both Han and I can wake up to its heavenly smell. I swear that the smell makes me dream every time.
I bought a beef chuck roast and left it in the fridge for barbacoa the other day. Han came out to the kitchen and asked me, “What’s for dinner?” Before I said anything, he answered his question himself in an exciting tone, “Barbacoa?!”

“I was going to make it tonight so that we can have it tomorrow. It takes at least eight hours, you know!” I said.
Han really wanted to have the barbacoa for dinner that day, so he didn’t give up, “Can you make it in the Fusion Cooker?”

It took me a good couple seconds to let the idea process in my head. I widened my eyes, “Maybe. Let me try it.”
I did exactly what I would do to make the barbacoa in a slow cooker. I made the sauce in a food processor; chopped up some onions; rinsed the meat and pat it dry. When I placed the meat in the waterless pot of my Fusion Cooker, I realized that my 4-pound chuck was flat and big and it’s a tight fit. But I could still manage to add onions and the sauce.

At this point, the question is which lid I should use. I started with the metal lid and the sauce was coming out of the cooker a little. Then, I switched to the glass lid for venting. After 2 hours of cooking at level 3, my Fusion Cooker beef barbacoa turned out like this.
It’s all about experimenting, isn’t it? This Fusion Cooker keeps surprising me and I will totally let it. I hope you do too.

Description

Ingredients
- 3–4 pounds beef chuck roast
- 1 medium onion, sliced
- 3–4 chipotle peppers in adobo
- 1 cup beef broth or bone broth
- 4 cloves garlic
- 1 1/2 tablespoons ground cumin
- 1 tablespoon dried oregano
- 2 teaspoons salt
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon ground cloves
- 1/4 cup fresh lime juice
- 3 bay leaves
Instructions
- Rinse beef and pat it dry with paper towels. If your beef chuck is too big, cut it into large cubes and place them in the waterless pot of a Fusion Cooker. Add onions.
- Place chipotle peppers, broth, garlic, cumin, oregano, salt, pepper, ground cloves, and lime juice in a food processor. Pulse until blended. Pour the mixture over the beef. Add bay leaves.
- Cover with the glass lid. Select “Cook” mode, level 3 and set the timer for 2.5 hours or until the beef is tender.
- Transfer beef to a shallow container and shred the beef with two forks. Enjoy!

I have never heard of a fusion cooker before! I’m going to have to do some research on it! I do love barbacoa though, it’s one of my favorite dishes. I love it on tacos! I’ll check out what a fusion cooker is and have to make this dish!
